With the beginning of summer here I always think of citrus. Here in Arizona there are tons of citrus trees! Tons of them! I am just lucky enough that my neighbors lemon tree hangs over my back yard wall!! I know free lemons!!! Nothing says summer to me more than an ice cold glass of lemonade or a lemon meringue pie!! Well today how about a recipe for Lemon Poppy seed Bread!! Reminds me of the giant muffins you get at Costco or Sams Club oh my delicious!!! 
This is a classic quick bread and sooo easy to make!! I love it with a cold glass of milk!!

- Directions:
- Preheat the oven to 350-degrees. Grease and flour a bread pan.
- In a large mixing bowl, sift together the flour and baking soda. Mix in the sugar and poppy seeds. Whisk in wet ingredients until the batter is well combined.
- Spoon the batter into the prepared pan. Bake for 50-60 minutes until a toothpick inserted in the middle comes out clean. Cool for about a half hour before turning out to finish cooling on a wire rack. Slide a piece of parchment paper under the wire rack for easy clean up.
- Prepare the glaze and spoon over the loaf as soon as it is on the wire rack. Let set for 1 hour to set up. Serve chilled or at room temperature.
- Store leftovers in an airtight container in the refrigerator.
