I am so loving this Travel Trailer Sweets series! It has been so fun to make all these treats without using my oven. Because here in Arizona if you can avoid turning on your oven its a total win and for me that’s pretty much any time of year. But I still love to bake so for me sometimes using the oven is unavoidable. But today I have a nice twist on a favorite candy bar. These Almond Joy No Bake Cookies are as good as the candy.
We have been so busy getting our travel trailer up and running that I almost ran out of time to whip these Almond Joy No Bake Cookies up. But because this recipe is so quick and easy I was able to make these no bake cookies in a very short amount of time. I am finding most no bake cookies are pretty quick to put together. I am lazy so I make them in the pan I use to melt the butter and cook the sugar in. In this case its my electric skillet. LOL.
Now you know I have to make everything pretty so I put an almond on the top of each cookie and drizzled with melted chocolate. You don’t have to do this these Almond Joy No Bake Cookies are just as delicious without all the pretty things. There is coconut and almonds in the cookies so like I said the almond and chocolate drizzle are really just to pretty up the cookies. The coconut and oatmeal give this cookie a nice chew and the almonds give it a great crunch. Just like the Peanut Butter Crunch No Bake Bars if you like chew and crunch these cookies are the ticket.
Almond Joy No Bake Cookies
Ingredients
- 2 c sugar
- 1/2 c butter
- 4 Tbsp cocoa unsweetened
- 1/4 c milk
- 1/2 tsp almond extract
- 3 c quick oats
- 1/2 cup chopped almonds
Instructions
- In saucepan, combine the butter,coco,sugar & milk. Bring the mixture to a boil & boil for 1 minute. Remove from the heat & add remaining ingredients. Drop from a spoon onto wax paper. makes 3 dozen.
