I love cookies just about any kind of cookie. One cookie that can be over looked is the Biscotti. An Italian twice baked crisp dipping cookie. I used to think that you could only dip these delicious cookies in coffee. I don’t drink coffee so I never really ate biscotti until a few years ago when one biscotti fell into my hot cocoa. Yes you heard me right. Why had it taken me so long to figure out that hot cocoa is amazing with biscotti. Guess what else you can dip biscotti in? MILK yes plain old ice cold milk. I know! Ya I kinda feel silly that I had never thought of that. This Snickerdoodle Biscotti is so easy to make and so delicious!
I am Italian and my Nonna (father’s mother) was not a very good cook or baker for that matter, however my mother’s mom whom I never had the pleasure of meeting, loved to cook. She was a school lunch cook. I attribute my love of cooking to her I think it is in my genes! My mother was a great cook but not a great baker and that has turned with me I am an ok cook but a good baker so when I do bake I made sure to use fresh spices in my baked goods. I can always count on McCormick® spices to always be fresh. These Snickerdoodle biscotti are filled with delicious McCormick® Ground Cinnamon.
Another thing I love using McCormick Ground Cinnamon for is McCormick Ground Cinnamon toast!! Warm toast with melted butter and sugar McCormick Ground Cinnamon seeping into that butter! What childhood memories this brings back! OK on with the biscotti. Biscotti needs to be a crisp cookie but not so hard you will chip a tooth on it and I have perfected my biscotti in this regard. I still bake it twice but most will leave it in the oven after turning it off after that second bake. I found this makes my biscotti too hard for my taste. I take it out after the second bake and let it cool. This leave the cookies crisp but a bit soft on the inside. This makes these cookies not only good for dipping before eating but good to eat without dipping!
Another characteristic of biscotti is its shape. They are domed on top and cut at an angle. I’m not sure if this makes them taste better or better for dipping but it does give the cookie a definite look to them! I also love to either dip or drizzle the biscotti with chocolate or white chocolate! Gives them a little something extra. I also sprinkled the white chocolate with McCormick Ground Cinnamon and sugar! YUM!
I cant seem to stop eating these cookies! They are so delicious. Not too sweet, light and crisp texture and that McCormick Ground Cinnamon it is perfect.

Snickerdoodle Biscotti
Ingredients
- 1 yellow cake mix
- 1 stick of butter melted
- 2 large eggs
- 1 cup flour
- 1 TBS McCormick Cinnamon
- 4 oz melted white candy melts or almond bark
- 1/4 cup sugar
- 1 tsp cinnamon
Instructions
- Place all ingredients in large mixing bowl. Blend with electric mixer on low speed until well blended. Dough will be thick and come together in a ball. Divide dough in half. With one half of dough shape into a rectangle about 14"x 2.5" thick. Mound the dough so it is slightly higher in the center. Repeat with other half of dough. You can bake both on one cookie sheet place them about 4" apart. Bake first time in oven for 30-35 min. Until toothpick inserted in center comes out clean, Remove from oven and let cool for 10 minutes. Cutting on the cookie sheet use a sharp serrated knife and slice the rectangle on a diagonal into 3/4 inch inch thick slices. Carefully turn slices on their side, arranging on the cookie sheet. Bake cookies for second bake for 10 minutes. Remove from oven and let cool on cookie sheet.while cookies are cooling mix 1/4 cup sugar and 1 tsp cinnamon. When cookies are cool drizzle with melted candy melts then sprinkle with cinnamon sugar mixture. Let candy harden. Store in an air tight container.
