Are you in the throws of creating and making those amazing cookie trays? Are you looking for one more amazing recipe to make? But have little time to do it? I have an amazing short cut recipe here today! These Buttercream Thumbprint cookies are so good and super easy to whip up!
Starting with delicious Pillsbury Sugar Cookie dough and a few other ingredients these cookies are sooo good! I really love using Pillsbury Cookie Dough they are delicious and can be easily found at your local Walmart. If your really running short of time you can use pre-made frosting but today I decided to make my favorite butter cream frosting. It doesn’t take a lot of time to whip up this seriously delicious frosting.
These cookies are great because you can get your kids involved too. Kids love helping in the kitchen. They can be in charge of the rolling and dipping in the sprinkles and little thumbs are perfect for the thumbprint in the middle of the cookie. Plus the holidays are all about family right? What better way to have family time than to gather together in the kitchen and bake? My little granddaughter loves to bake with me.
So your going to want to let the cookie dough warm up just a bit so the extra flour can be added in. I took my dough out of the refrigerator and let it sit on the kitchen counter for about 30 minutes before mixing in the flour. The addition of the flour is needed to give these cookies just a little more body which helps them from spreading too much.
If you have a variety of sprinkles you could change it up a bit! Now another way to add some more variety is to color the frosting, I just kept it white for this batch but how cute would a red dollop of frosting look in the middle of the cookie!

Buttercream Thumbprint Cookies
Ingredients
- One 30oz Tube Pillsbury Sugar Cookie dough
- 1 cup flour
- 1/3 cup sprinkles
Frosting
- 1/2 cup butter softened
- 1/2 cup shortening
- 2-3 cups powdered sugar
- 1 tsp. vanilla extract
- 1/2 tsp almond extract
- 2-3 Tbs milk
Instructions
- Preheat oven to 350 degrees.
- Remove Pillsbury Sugar cookie dough from refrigerator and allow to come to room temperature. Place in medium bowl and add flour. Work flour into dough until all is incorporated.(dough will be stiff)
- Roll into walnut sized balls and dip top of cookie in sprinkles, place on cookie sheet and using thumb create a small well in middle of cookie.
- Bake in preheated oven for 9-12 minuets. Do not over bake.
- Allow cookies to cool them frost with a dollop of buttercream frosting in the middle of each cookie.
Frosting
- Place butter and shortening in bowl of stand mixer, using the whisk attachment whip until light and fluffy, add in vanilla and almond extract. Using 1/2 cup measuring cup add in powdered sugar until desired consistency. If frosting is too stiff add 1 Tbs of milk at a time until frosting is desired consistency.
- Place in piping bag fitted with large star tip. Pipe a dollop of frosting on each cookie. You can also use a large plastic storage bag with the corner cut off to pipe frosting in middle of cookies.
