How would you like to have dinner done and on the table in 30 minutes or less? With little prep and little clean up involved? Dreaming? Not today! I have a delicious and easy recipe for Easy Cajun Chicken and Peppers. You can have this dish ready and on the table in that dreamed about time frame.

Easy Chicken and peppersI tried a new cooking method well kinda new. Have you ever cooked your food in parchment? I have done it once and I didn’t like the outcome so I never tried it again. Until I was asked to try Ready Chef Go Bags. I have to tell you I was kind of excited to try these bags and I have to tell you I love them! They are easy to use and easy to clean up!

This recipe is really simple. Slice your peppers;

easy cajun chicken and peppers 3Place in a bowl and toss with BBQ sauce and seasonings:

easy cajun chicken and peppers6Seal them up. Bake. Remove from the oven and let sit for one minute.

Easy Cajun Chicken and Peppers Garlic Chicken and Potatoes

Ingredients Method

Ingredients
  

  • 1 lb boneless skinless chicken breast, cut into 1 1/2 inch (7 cm) pieces
  • 1 onion chopped
  • 1 green or red pepper chopped
  • 1 tbsp vegetable oil
  • 1 tbsp barbecue sauce
  • Seasoning Mix: 1 tsp each: paprika and garlic powder 1/2 tsp each: dried thyme leaves, dried oregano leaves, cayenne, salt and pepper
  • 2 Tbs olive oil
  • 4 boneless skinless chicken breasts
  • 2 large potatoes thinly sliced
  • 1 Tbs finely chopped garlic
  • 1/2 tsp smokey Paprika
  • Salt and Pepper to taste
  • 4 Ready Chef Go Bags

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken, onion, pepper and oil, toss to coat evenly. Add barbecue sauce and toss to coat evenly.
  3. In small bowl, combine all seasonings, sprinkle over chicken and peppers and toss again.
  4. Place in an even layer in Ready Chef Go Cooking Bag on rimmed baking sheet.
  5. Close bag. Bake 20 minutes or until chicken and vegetables are tender.
  6. Open bag and let stand a few minutes.
  7. Slice potatoes and place in a bowl and drizzle with olive oil, sprinkle with garlic and paprika lightly toss to coat with oil and spices add in chicken breasts and toss again to coat chicken.
  8. In one bag place 1/4 potatoes in a thin layer on bottom of Ready Chef Go bag and sprinkle with salt, pepper and 1/2 of garlic. Place 1 chicken breasts on top of potatoes and sprinkle with salt, pepper, garlic and paprika.
  9. Repeat with remaining spices, chicken and potatoes. Place all bags on baking sheet and bake in 350 degree oven for 25-30 minuets.
