Black Bean and Corn Salsa Verde

Ingredients
  

  • 1 cup 505 Southwestern Hatch Valley Green Chile Salsa
  • 1 can Ro Tel tomatoes
  • 1 small yellow onion
  • 1/2 cup fresh cilantro
  • juice of one lime
  • 1 Tbs chopped garlic
  • 1 tsp salt
  • 1/2 cup black beans rinsed
  • packet of corn from Eat Smart Gourmet Vegetable Salad Kit

Instructions
 

  • Place first seven ingredients in food processor and pulse until desired consistency is achieved.
  • Add in beans and corn stir to incorporate into salsa. (corn will re-hydrate)
  • Drizzle on salad. Enjoy
