Easter Nest Cookies

Ingredients
  

Sugar Cookies

  • 1/2 cup butter softened
  • 1/2 cup shortening
  • 11/2 cups granulated sugar
  • 1 egg
  • 21/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for rolling cookies

Frosting

  • 1/2 cup butter softened
  • 1/2 cup shortening
  • 1 lb powdered sugar
  • 5 Tbs water
  • pinch of salt
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • green food coloring

Decor

  • multicolored sprinkles
  • small egg shaped candies

Instructions
 

For Cookies

  • Preheat oven to 350ยบ F. Line cookie sheets with parchment paper or a nonstick baking mat.
  • Cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add egg and mix until well-combined.
  • Stir in flour, baking powder, salt, and vanilla. Scoop cookie dough by the tablespoon full and roll into a ball.
  • Add granulated sugar to a large bowl for rolling cookie dough in before baking. Place each ball of cookie dough into the bowl of granulated sugar and roll to coat well. Place cookie dough onto baking sheet, spacing about 11/2-inches to 2 inches apart. Lightly press each cookie down. Bake for 8 to 10 minutes or until lightly browned.

For Frosting

  • Place butter and shortening in a bowl and whip with a mixer until light and fluffy add salt, vanilla and almond extracts. Slowly add in powdered sugar until well blended. Add water 1 Tbs at a time until frosting is a smooth and creamy texture.
  • Divide frosting in half and color half green.

Decor

  • Frost cookies with white frosting. Place green frosting in pastry bag fitted with a Wilton Decorating Tip #233. Pipe the green frosting in a wreath shape in the middle of each cookie. Place 3 small egg shaped candies in wreath on each cookie. With green frosting add bits of grass around the eggs. Sprinkle multicolored sprinkles over cookies!
