Cucumber & Onion Salad

Ingredients
  

  • 2 Cucumbers peeled and sliced
  • 1 sweet onion sliced thinly I prefer a purple onion
  • 2 T fresh chopped parsley
  • 1/2 cup white or apple cider vinegar
  • 1 1/2 cup water
  • 1 t sugar
  • salt and pepper to taste

Instructions
 

  • Simply slice your cucumbers, you can seed them if you like but I don't. Slice your onions and separate the slices. Place all in a large bowl and lightly toss.
  • Mix your dressing in a small bowl and then pour over vegetables. Lightly toss and then sprinkle with chopped fresh parsley. Salt and Pepper to taste.
  • Cover and refrigerate for at least 12-24 hours.
