Lemon Poppyseed Bread

Ingredients
  

  • Bread Ingredients:
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon poppy seeds
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking soda
  • 1 cup vanilla or plain yogurt
  • 1/2 cup softened butter
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon fresh lemon juice
  • Glaze Ingredients:
  • 1 cup confectioners’ sugar sifted
  • 2-3 tablespoons fresh lemon juice
  • 1 tablespoon poppy seeds

Instructions
 

  • Directions:
  • Preheat the oven to 350-degrees. Grease and flour a bread pan.
  • In a large mixing bowl, sift together the flour and baking soda. Mix in the sugar and poppy seeds. Whisk in wet ingredients until the batter is well combined.
  • Spoon the batter into the prepared pan. Bake for 50-60 minutes until a toothpick inserted in the middle comes out clean. Cool for about a half hour before turning out to finish cooling on a wire rack. Slide a piece of parchment paper under the wire rack for easy clean up.
  • Prepare the glaze and spoon over the loaf as soon as it is on the wire rack. Let set for 1 hour to set up. Serve chilled or at room temperature.
  • Store leftovers in an airtight container in the refrigerator.
