I love soup!! Love it! I was just talking to my co worker Rebecca telling her I wanted Soup for dinner ! So what lands in my inbox but my “TidyMom” email!!! and it is Soup-a-Palooza time again so here is my entry!!
I love this soup it is rich and hearty and very low carb!! You can adjust the spicyness to your tastes but in our house we like a kick!! Serve this with a green salad and some yummy rolls and you have a great dinner!!

Spicy Pumpkin & Sausage Soup
16 ounces hot Italian style sausage
1/2 cup onions, minced
1 clove garlic, minced
1 t. Red Pepper Flakes
1 15 oz can white canellini beans
1 tablespoon Italian seasoning
1 t season salt
1 t black pepper
1 cup fresh mushrooms, chopped
15 ounces pumpkin, canned
5 cups low sodium chicken broth
1/2 cup heavy cream
1/2 cup sour cream
1/2 cup water
Over medium heat brown the sausage breaking into small bits. Drain fat. Add the onion, garlic, Italian seasoning and mushrooms and sauté until vegetables are cooked.
Add the canned pumpkin and the broth, stirring to mix well. Cook at a low simmer for 20-30 minutes. I put this in my crock pot first thing in the morning and let it cook on low for about 6 hours.
Remove from heat and stir in heavy cream, sour cream and water.
