Sopapilla Puff Pastry Cheesecake

Last week I hosted a Puff Pastry brunch and so I continued with the Puff Pastry recipes!  So today I have Sopapilla Puff Pastry Cheesecake!  This is so easy and your guest will be so impressed!!  I took this with me to a pot luck and there was not one piece left!!
sopapillapuffpastrycheesecak4pgBasically it is a sheet of Puff Pastry on the bottom a beautiful layer of sweetened cream cheese another layer of Puff Pastry then butter and cinnamon and sugar on top!!  That is it!!

Sopapilla Puff Pastry Cheesecake

Ingredients

  • 2 sheets Puff Pastry
  • 16 oz softened cream cheese
  • 3/4 cup sugar
  • 2 teaspoons good vanilla
  • 1/2 cup sugar
  • 2 teaspoon cinnamon
  • 1/2 stick melted butter

Instructions

Pre heat oven to 400 degrees.

Place on Puff Pastry sheet on the bottom of a 9x13" pan you man need to trim edges to make it fit. With a fork prick pastry several times. Place in 400 degree oven and bake for 15 minuets. While the pastry is baking mix the cream cheese, sugar and vanilla in bowl until combined. Remove puff pastry from oven and spread cream cheese mixture over partially baked pastry. Place second sheet of Puff Pastry over cream cheese (again you may need to trim edges to make the pastry fit). Pour melted butter over sheet of Puff Pastry. Mix 1/2 cup sugar and 2 teaspoons cinnamon in a small bowl then sprinkle over butter topped pastry.

Bake for 20-25 minutes until pastry is puffed up and golden brown. Let cool cut into squares and enjoy!
