So what do you do when you cook a roast and it has great flavor but is dry? Too dry to eat again without doing some doctoring?? Well I did a little number on this roast and totally turned a dry flavorful roast into a moist and tasty Slow Cooker Beef Stroganoff Soup! AND I used less than 12 ingredients!! Most of which you will have on hand!!
This soup turned out sooo good and the roast beef was soooo tender!!
This is one dish that will make it to our dinner table again, it was savory and rich, the beef and mushrooms were tender and delicious. Serve it with a salad and warm crusty bread slathered with butter and you have one amazing meal!! Here is my recipe for my Slow Cooker Beef Stroganoff Soup!
Slow Cooker Beef Stroganoff Soup~Recipe
Ingredients
- 6 Cups Water
- 1 Pkg Beefy Onion Soup I used Lipton
- 2 cups slice mushrooms
- 1 lb stew meat or left over roast beef 2 cups
- 1 can cream of mushroom soup
- 1/2 cup sour cream
- 2 cups egg noodles uncooked
- Salt and pepper to taste
- sliced scallion for garnish
Instructions
- Place water, soup mix, meat, and mushrooms in crock pot and cook on high for 4 hours until meat is cooked.
- After 4 hours add in the can of cream of mushroom soup mix until the soup is incorporated into broth of soup. Add in dry noodles and cook for additional 20 minutes or until done. Add in sour cream and blend into soup. Serve garnished with sliced scallions.
