Now I bet your wondering what the heck a Mini PBC Icebox Cake is! How about a Mini Peanut Butter Chocolate Icebox cake? Who doesn’t love that combination? Mr Pinkcakeplate will eat anything with peanut butter in it and these miniature icebox cakes were no exception.
These cakes are simple to prepare but you will want to plan ahead as they need to sit for overnight to allow the crisp cookies to soften to that tender cake like texture! So you will need just a few simple ingredients:
I have found these chocolate wafer cookies at my local Walmart, yours may not carry them so you might have to do some scouting around to find them but I promise it is totally worth it!
Another little tip is you will want to put these miniature cakes on the dish you want to serve them on. The softening process makes them a bit tricky to move from one dish to another. You might be better at this than I am trust me I learned from experience! It was a good thing that no one minded a few scrapes and bruises on their mini cakes!
Mini PBC Icebox Cakes
Ingredients
- 1 box 9oz Famous Chocolate Wafers (Nabisco)
- 1 cup 8 ozs Heavy Whipping Cream
- 3 tablespoons powdered sugar
- 2 tablespoons creamy peanut butter
- Chopped Peanut Butter Cups for Garnish optional
Instructions
- In the bowl of your electric mixer, add the whipping cream, powdered sugar and peanut butter. Using the whisk attachment, beat on high speed until stiff peaks form, usually 2-3 minutes.
- Spoon 3/4 of a teaspoon of whipping cream on a cookie, press another cookie on top and continue until your cakes are 5 cookies tall.
- Garnish top of cake with a dollop of cream and peanut butter cup candy if desired.
- Place onto your serving tray and refrigerate overnight. The cakes soften and may be difficult to move the next day before serving.
