With sweet corn in season right now it only made sense that I make this amazing Mexican Street Corn Salad. I almost put some bacon in this recipe but then it wouldn’t be a Mexican Street Corn Salad it would just be more amazing! Because lets face it bacon makes everything more amazing.
The combination of sweet corn, salty cojita cheese and the kick of jalapeño, is balanced perfectly in this delicious salad.
Street Corn Salad
Ingredients
- 2 Tbs olive oil
- 4-6 ears fresh corn
- 2 tbsp. mayonnaise
- 2 oz. cotija cheese finely crumbled
- 1/2 cup green onion finely sliced
- 1/2 cup cilantro leaves finely chopped
- 1 jalapeño pepper seeded and membranes removed, finely chopped
- 2 medium cloves garlic minced
- 1 tbsp. fresh lime juice
- 1/2 tsp ground cumin
- Salt and Pepper to taste
Instructions
- Lightly brush the cleaned corn with olive oil place over hot grill. Allow corn to lightly char on one side then roll slightly to char another side of the corn. Continue rolling corn until all corn has lightly chard on all sides. Allow corn to cool then cut corn kernels off the cob and place in a bowl.
- Add mayonnaise, cotija cheese, green onions, cilantro, jalapeño, garlic, lime juice, and cumin and stir to combine. Taste and adjust seasoning with salt and more cumin to taste. Serve immediately.
- If you don't want to grill your corn you can char the corn kernels in a heavy skillet with 2 Tbs olive oil. Cut corn off cob and place in hot skillet allow corn to char on one side then stir corn and allow corn to char.
