So with the Superbowl over and done that isn’t the end of great party food!! I have been wanting to make these little babies for a while!! Everyone loves a good meatloaf sandwich right?? How about Meatloaf Sliders? Not your ordinary meatloaf sandwich!! And what a great way to use that leftover meatloaf!!
I make a pretty generic meatloaf but Mr. Pinkcakeplate loves it so I don’t mess with the recipe much!! But ohhhh I can make something yummy with the leftovers!! Here is my recipe for plain jane meatloaf:
- 1 lb Ground beef
- 1 egg
- 3/4 sleeve saltine crackers crushed
- 1/4 c Ketchup
- 2 T Yellow Mustard
- 1/4 chopped yellow onion
- Mix all ingrediants together in a bowl until well blended. Do not overwork the mixture as it will make the meatloaf tough. If the meatloaf is to dry add more Ketchup if too wet add more crushed crakers.
- Place on top of two slices of bread and form into a loaf shape. Pour about 2-3 T Ketchup on top of meatloaf and spread over the top.
- Bake at 350 degrees for 50 minutes or until no longer pink in middle.
Now this is where it gets fun!! Lets build some Meatloaf Sliders!! How about a special sauce?? Ok maybe not so special, homemade special sauce is pretty easy, 1/4 mayo, 2 T. sweet pickle relish, 3 T. ketchup and a dash of Worcestershire sauce!! Spread bottom portion of roll with plenty of this yummy sauce.
I sliced the meatloaf and grilled them in a hot saute pan to get a nice crisp outer layer.
Sliced cheddar cheese on top of the meatloaf is amazing I heated it so it was melty and gooey!! YUM!!
Slather that special sauce on the bottom of the bun put your meatloaf on top add onion and a pickle top with the other half of the bun and your good to go!!! This is sooooo easy and let me tell you it is sooooo good!!
You can add more sauce if you want but they are good with out!! LOOK!!
Oh ya sooooo good!! I am a little obsessed right now with sliders so here are a few more recipes!!!

Oh Laura! These look so good! Your meatloaf recipe is just how I make my meatloaf… {without a recipe} so I know I will love it. I never thought to cook the meatloaf then cup up into sliders. I will be doing this!
