I love shortbread!!! And I make it a lot. Usually at Christmas time you know the Peppermint Shortbread Bites!! Well today I put a fun summer twist on my go to Shortbread recipe and came up with Funfetti Shortbread bites!! YUMMMM!!
Dont those look delicious?? And this recipe makes a lot of these bite sized cookie!!
Funfetti Shortbread Bites!!
Ingredients
- 1 cup butter softened (do not use margarine)
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1 Teaspoon vanilla
- 2 heaping Tablespoons multi colored sprinkles for batter
- 3 oz vanilla-flavored candy coating almond bark, melted
- additional sprinkles for top of cookies
Instructions
- In large bowl, beat butter,powdered sugarand flour with electric mixer on medium speed until fluffyadd in vanilla. On low speed, fold in 2 T sprinkles.
- Place plastic wrap on counter and place dough in the middle shape into an 8"x8"x3/4" square and wrap tighly with wrap. Place in refriderator for at least 2 hours or overnight. Remove from refiderator and place on cookie sheet. Heat oven to 325°F. On cookie sheet, cut dough into 8 rows by 8 rows, making 64 squares. With knife, separate rows by 1/4 inch. Bake 28 to 35 minutes or until set and edges are just starting to turn golden. Do not remove cookies from cookie sheet. Cool completely, about 30 minutes.Meanwhile, in small resealable food-storage plastic bag, place melted candy coating. Seal bag; cut tiny hole in corner of bag. Pipe candy coating over cookies. Before candy coating sets, sprinkle colored sprinkles over cookies. Let melted candy coating set and enjoy!!
If you need an easy and fun little cookie for a BBQ or summer gathering these are great they do take a little time in the fridge before baking so plan for that!! These cookies are one of my absolute favorites!! Have afun Summer day!!
