I have been baking up a storm the last week and do not see me slowing down one bit! It seems like from about a week before Halloween to well after New Years I am in the kitchen 99% of the time! Now that is perfectly ok because the kitchen is my happy place! Now don’t get me wrong its not always “happy” in my kitchen but it is the one place in my home I feel most comfortable! Some things I do when I cook or bake is to take short cuts and today’s Easy Classic Nog Bundt Cake is no exception!
Let me tell you what inspired this cake. I just so happened to be in my local Fry’s Food Store and spotted something new! International Delight Classic Nog and Hot Chocolate! Now I have been a HUGE fan of International Delight Creamers and have been using them in my protein smoothies and hot cocoa for years now so when I came across these new additions I did a little jump for joy!
I absolutely love Classic Nog and I am the only one in my house that will even touch the delicious creamy beverage. I love the rum and nutmeg flavors and the thick creaminess of Nog. It is a total treat for me so I don’t drink it very often. Using it in a cake is a great way to enjoy the flavors of nog! So in making this delicious Easy Classic Nog Bundt Cake I not only started this recipe with a cake mix but I used International Delight Classic Nog in the batter as well!
The addition of International Delight Classic Nog creates a deliciously dense and moist cake! To top is off the glaze is also made with International Delight Classic Nog so those flavors carry through in the glaze. I grated some fresh nutmeg on top to give it a more intense nutmeg flavor! Classic Nog flavors in a cake how much better can it get??
Easy Classic Nog Bundt Cake
Ingredients
- 1 Yellow Cake Mix
- 1 small package instant vanilla pudding 3.9 oz
- 1 cup International Delight Classic Nog
- 1 tsp rum extract
- 1/4 cup vegetable oil
- 1 1/2 teaspoon nutmeg
- Glaze
- 1 1/2 cup powdered sugar
- 1/4 teaspoon rum extract
- 4-6 teaspoons International Delight Classic Nog
Instructions
- In a large bowl, combine the cake mix, pudding mix, eggs, eggnog, oil, extract and nutmeg. Beat on medium speed for 2 minutes.
- Pour into a well-greased and floured 10-in. bundt pan. Bake at 350° for 38-41 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack for 10 minutes before removing from pan to a wire rack to cool completely.
- For Glaze:
- In a small bowl, combine the confectioners' sugar, extract and enough eggnog to achieve a drizzling consistency. Drizzle over cooled cake.
