Lately I have had absolutely no interest in cooking dinner. You know the drill…no one can decide on what they want for dinner so if I can put something on the table in less than 15 minutes I am all for that. So how about a Roll Up Chicken Taco Recipe! Super easy and of course pretty yummy too!!
These were so easy to put together and they were a huge hit with Mr.Pinkcakeplate!! They will absolutely be on our dinner table again!! The nice thing is you can pretty much customize you toppings for the tacos!! The flavor of the chicken was delicious!! Not too spicy but with enough flavor to add to the total flavor profile!!

Ingredients
Method
- Place Shredded Chicken, Chicken Taco Seasoning and water in a skillet mix to cover chicken with seasoning. Bring to a boil and then turn down the heat and simmer for 10 minuets until all liquid is evaporated.
- While chicken is simmering, grate cheese and thinly slice lettuce. Place tortillas in damp paper towels and microwave for 20 seconds.
- When all liquid is absorbed spoon chicken into tortillas and top with cheese, lettuce,salsa and sour cream.

I do know the drill and I’m so excited about this 15 minute recipe that it has to be featured when the next See Ya in the Gumbo goes live Sunday evening. We love Mexican/Tex/Mex flavors at my house and I always need more quick dinner ideas.
