We love breakfast in our house and like most families we eat it for dinner at times! These are some of the most delicious meals we have! One night I we did just this and I had some leftover boiled potatoes so I whipped up this little concoction!! Bacon Cheddar Hash Brown Pancake!
This is crispy and buttery on the outside and filled with bacon and melted cheddar cheese! What could be better?? This recipe only uses a few ingredients and is quick and easy to prepare! Now if you don’t have any leftover boiled potatoes you can use frozen hash browns!! Another thing I want to do is switch up the insides! How about pepper jack cheese with chorizo in the middle?? Or Colby cheese with Canadian bacon?? The possibilities are endless!! But you always start with those delicious potatoes!
Another thing is you want to make sure you start with a hot pan with butter and olive oil in it! This will give those potatoes a nice golden brown crispy layer!
Bacon Cheddar Hash Brown Pancake
Ingredients
- 2 Medium boiled potatoes grated
- 1 Cup Cheddar Cheese grated
- 4 slices cooked bacon crumbled
- 2 Tablespoons olive oil
- Salt and Pepper to taste
Instructions
- Heat oil in skillet until hot. Sprinkle half of grated potatoes in hot skillet. Sprinkle with cheese and bacon and top with remaining grated potato and press lightly to compress all ingredients. Cook first side for about 5 to 7 minutes or until golden brown. When golden brown gently flip "pancake" and cook second side for 5 to 7 minutes or until golden brown remove from skillet and serve with sliced green onions as garnish.
