Apple Cinnamon Pull Apart Bread #BrunchWeek
Ingredients
- Dough:
- 4 1/2 cups 22.5 ounces all-purpose flour
- 2 tablespoons Red Star Platinum yeast
- 1/3 cup 2.5 ounces granulated sugar
- 1 1/2 teaspoons salt
- 4 large eggs 7 ounces
- 1 1/4 cup hot water
- 8 tablespoons 4 ounces butter, melted
- Apple Cinnamon filling
- 2 cup finely chopped Lady Alice Apples
- 1 tbsp Lemon Juice
- 1/4 cup Sugar
- 2 tbsp Cornstarch
- 1/2 tsp Cinnamon
- 1/2 cup warm Water
- Glaze
- 1 cup powdered sugar
- 1-2 Tablespoon milk
Instructions
- In a large bowl whisk together the flour, yeast, sugar and salt. Make a well in the center of the dry ingredients.
- In a 2-cup liquid measuring cup, whisk together the eggs and pour them into the well. Use the same measuring cup for the hot water. Pour it around the edges of the well (not directly on the eggs) and then add the melted butter to the bowl. Use a large spoon to mix the ingredients together until a soft, rather wet dough is formed.This dough is much softer than a traditional bread dough. It may look a bit lumby too but that is ok.
- Cover the bowl with greased plastic wrap and refrigerate overnight or for 8-10 hours.
- Prepare Apple filling while dough is chilling.
- when dough is ready, prepare 2 mini loaf pans with cooking spray and set aside. Preheat oven to 350 degrees.
- Roll and stretch the dough into a 16-inch square on a lightly floured surface. Spread apple filling over dough. Cut into 16 small squares and make 4 stacks of 4 squares each.
- Place 2 stacks on its side in each prepared loaf pan.
- Bake the loaf until it's browned and cooked through,30 minutes (tent with foil if it's browning too quickly). Let cool 15 minutes in the pan. Remove to a plate and let cool 30 minutes. Drizzle with glaze.
