I was looking for something easy and yummy to make in a flash so I came up with this little recipe!! Almond Joy Cookie Bark.
You will need just a few things and you can mix it up all you want!! I was at the Dollar Store looking for Graham Crackers and couldn’t find any but I found Coconut Bars and toasted coconut!! My treat was born out of not being able to find an ingredient!!! I love it when that happens!!
Almond Joy Cookie Bark
Ingredients
- 1 Pkg Coconut cookies I found at Dollar Tree
- 1/2 can sweetened condense milk
- 12 oz sweetened flaked coconut
- 1 cup powdered sugar
- 1 t vanilla
- 1/2 cup almonds
- 16 oz milk chocolate candy melts melted
- 1 bag toasted coconut I found at Dollar Tree
Instructions
- Place cookies in a cookie sheet lined up side by side end to end. Spread 1/3 melted chocolate candy melts in a thin layer on parchment paper. Place cookies on melted candy placing them end to end and side by side. Spread 1/3 of melted chocolate over cookies. Quickly place almonds on chocolate while it is still melted. Mix together coconut ,sweetened condensed milk, powdered sugar and vanilla in a bowl. When combined spread thinly over almond and chocolate layer, Spread remaining melted chocolate candy melts over coconut layer and sprinkle with toasted coconut. Let set up then cut into bite size pieces!
I love the toasted coconut it was not sweetened and had the most lovely buttery slightly salty flavor which totally offset the sweetness of the candy. I love that it was in nice large pieces easier to pop in you mouth if it fell off the candy!! This treat is simply devine and very sweet! You will want to have a glass of ice cold milk close by. It will go perfectly with this Almond Joy Cookie Bark!!
