I was asked to make 200 cupcakes for a wedding in April. It was a lot of work and my dear friend Ashlee from Imtopsyturvy.com gave me some great advice and cheerleading along the way!!
I had a great time making the cupcakes and had fun tweeting the day of frosting them and delivery!! For those of you who missed it here is my 200 Cupcake adventure!!
I baked all the cupcakes through out the week prior to the wedding and wrapped them tightly with plastic wrap while slightly warm and put them in the freezer. This kept them moist and fresh!!(Thanks Ashlee for this tip!! it is an ingenious step in the process when making that many!!) You couldn’t even tell they had been frozen!
We had chosen 3 flavors: Lemon with Lemon Frosting, Chocolate with Chocolate Frosting and Vanilla With Vanilla Frosting. I sprinkled the cupcakes with wedding color sprinkles and sanding sugar!

Thank you for your post! I am making 250 cupcakes and was in a dilemma as to how to freeze them in the bakery box, but seeing how you did it has given me hope that they will make until Friday!
